속초 수복로의 ‘또만나식당’을 나서는 손님들의 표정은 비슷했다. 기다림은 길었고, 주차는 편하지 않았다. 대기번호를 받고 카카오톡 알림을 기다려야 했다. 그런데 뚝배기 앞에 앉은 뒤에는 말이 달라졌다.

식당 앞에는 테이블링 기계가 서 있었다. 원격줄서기를 한 손님도 현장에 도착하면 대기 확정코드 입력 또는 위치 인증을 해야 했다. 카카오톡 알림이 울려야 입장이 가능했다.

 

매장 안내문에는 테이블 수가 12개라고 적혀 있었다. 2인, 5인 테이블 활용도를 높이기 위해 해당 대기팀이 먼저 호출될 수 있다는 설명도 있었다. 작은 식당의 회전율을 맞추기 위한 방식이다.

매장 앞 주차 공간은 6대가 전부였다. 만차는 금방 왔다. 이중주차 구조라 차량 이동은 방문객들이 서로 맞춰야 했다. 식당 측은 만차 시 도보 5분 거리의 속초시청 제2주차장을 이용할 수 있다고 설명했다.

 

양옆 흰다정과 동명금속 매장 앞에는 주차하지 말아 달라는 안내도 붙어 있었다. 손님은 밥을 먹기 전부터 주차와 대기라는 첫 관문을 지나야 했다. 맛집의 인기는 식당 안에서 끝나지 않고, 골목 동선까지 흔들고 있었다.

■ 반찬과 손질은 호텔 주방 감각이었다

 

취재 과정에서 이 집 주인은 호텔 주방을 거친 속초 현지인으로 확인됐다. 다만 주인은 신문에 이름이 오르기보다, 손님들의 입소문으로 오래 평가받고 싶다는 뜻을 밝혔다. 정갈한 밑반찬 구성, 가시 없이 손질된 황태살, 오래 식지 않는 뚝배기 온도에서는 호텔식 주방 감각이 엿보였다.

 

밑반찬도 정갈했다. 계란말이, 어묵볶음, 숙주나물, 깍두기, 오이무침, 견과멸치볶음이 한 상을 받쳤다. 견과멸치볶음은 고소했고, 깍두기는 뽀얀 국물 사이에서 입맛을 다시 세웠다.
